Thanksgiving is done now what to do with leftovers?

So Thanksgiving dinner has come and gone now we have tons of leftover Turkey. So does anybody have recipes to spice up that cold turkey so you don't get sick of it?
 
Turkey chili. Just toss it in the crockpot with some canned chili and beans and whatnot. It will keep damn near forever if you freeze it.
 
Pick it apart, divide it and freeze it; figure out what to do with it later.
 
Same as usual, eat 'em all within 48 hours and feel disappointed that there wasn't more.

After giving as much as we could to relatives, we shove it in the fridge for a week of turkey sandwichesx234234.
That pretty much translates to: 'dad eats it and me and mom don't'.
I claim the potatoes and thats about it. I don't exactly like left over turkey.
 
I second the turkey sandwich notion. Drop some turkey pieces on bread, slather on some mayo and mustard, you're all set.

Mmm, I think I'd like one right now.
 
Well, we ate at my aunt's, so we only have a few leftovers. We'll probably eat some of what we brought home, tomorrow.
 
Mostly we just save the turkey and make a sandwich or if mom is up for it then a yummy turkey style crock pot soup of some sort with carrots and potatoes, man that things good.

Or on occasion just wrap it up in tinfoil and save it for later, usually mom eats it. I always seem to forget that there are leftovers in there, thats why we usually put stuff in the crock pot.
 
Hot turkey sandwiches the day after Thanksgiving are a family tradition. Too bad I won't get to do that this year since I'm not at home. Ah well, there's always Christmas.

A turkey omlete for breakfast? That could be good.
 
I do curried turkey salad, Shred or cube the turkey, add chopped celery, scallions, raisins, mayo and curry powder. Yummy!

I sometimes make turkey a la king as well with mushrooms, onions, peas, and a sauce made from chicken broth and cream.

Turkey tacos. Shred some turkey, and use a taco mix or make your own spice mixture (or get some mole-it's great). You can saute some onions and poblano peppers to go with it as well.

Trader Joes sells simmer sauces of various flavors which would work well with leftover turkey.
 
I plan to make a ham casserole later this morning. :) (That's because at last night's Thanksgiving dinner at my cousin's house there was just enough Honeybaked Ham left over to do this.)
 
We usually split the turkey amongst relitives and make sandwiches
 
Throw random shtuff in a bowl and grab a fork. =d

Or find some fun recipes. BUT THE FIRST WAY IS BETTER! >=[
 
Usually nothing. If we have enough turkey, we'll keep that, though I don't eat it. (I'm not much for leftovers.) Anything else (extra biscuits, mashed potatoes, corn, etc.) we just throw out.
 
We usually do Turkey sandwiches, Turkey soup/chili, or Turkey pot pie, or Turkey dinners LOL.
