They're probably just trying to stretch out as much as they can to hide how they have little new stuff to premiere now. Among the CN originals, We Baby Bears will be the last one with new episodes after Prince Ivandoe's last episodes premiere in the US at the end of the month so they're probably just trying to stretch the remaining new stuff out longer.

Could it be that the second season of We Baby Bears really is the final season of said show and it has somehow been quietly canceled without anyone being publicly informed? Or is a season 3 still on the table if they want this show to stay alive for longer?

If we were getting a third season, we've have known by now considering it's been 3 years since season 2 began.
